The product is advertised as three blades, but it seems that there are only two?

It only makes fettuccine and angel hair pasta. It advertises penne but I see no blades for that. I see only 2 cutting blades. The directions do not have anything for the penne.

Can this be used to make ravioli?

This can be used to make ravioli.

Can I make pappardelle?

I don't see why not. http://www.abeautifulplate.com/homemade-pappardelle-pasta-two-ways/
